- 2 c. sugar
- 1 (16 oz.) can pumpkin
- 1 c. vegetable oil
- 4 eggs, beaten
- 2 c. all-purpose flour
- 1 tsp. salt
- 2 tsp. soda
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- 1/2 c. flaked coconut
- 1/2 c. chopped pecans
Directions

1Combine sugar, pumpkin, oil and eggs; beat 1 minute at medium speed.

2Combine next 5 ingredients; add to pumpkin mixture.

3Beat 1 minute at medium speed.

4Stir in coconut and pecans.

5Pour batter into three greased and floured 8-inch round pans.

6Bake at 350° for 25 to 30 minutes or until done.

7Cool 10 minutes.

8Remove from pans and cool completely.

9Spread frosting between layers and on top.
