- 1 c. sugar
- 2/3 c. pumpkin
- 3/4 c. flour
- 1 tsp. baking soda
- 2 tsp. cinnamon
Directions

1Beat eggs for 5 minutes; add sugar.

2Stir in pumpkin and flour.

3Stir and add baking soda and cinnamon.

4Line a jelly roll pan with wax paper and grease paper.

5Pour in the cake, spreading evenly, and sprinkle with chopped nuts, if desired.

6Bake at 375° for 15 minutes.

7Loosen edges with knife and turn over onto tea towel that has been sprinkled with 10x sugar.

8Roll towel and cool for 20 minutes.

9Unroll and spread filling, then re-roll.
