  • 1/2 onion, chopped
  • 2 c. cooked summer squash, mashed
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 carrot, shredded
  • Salt and pepper to taste
  • 2 c. herb- seasoned bread crumbs
  • 3 T. butter, softened

Directions

    Saute onion in skillet sprayed with non-stick cooking spray. Combine squash, soup and sour cream in bowl. Add onion, carrot, salt and pepper; mix well. Fold in bread crumbs. Spoon into a 2-quart casserole. Dot with butter. Bake at 350° for 30 minutes. Makes 4 servings.
