  • 3 eggs, beaten well
  • 1 c. sugar
  • 2/3 c. cooked pumpkin
  • 3/4 c. flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon

    Add sugar to beaten eggs; beat.

    Add remaining ingredients and beat like a cake batter.

    Spread on cake roll pan that has been well greased and floured.

    Bake at 375° for 10 to 15 minutes. Loosen and turn onto a towel that is sprinkled with confectioners sugar.

    Roll up.

    Let cool.
