- 3 eggs, beaten with mixer at high speed for 5 minutes
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. flour
- 1/2 tsp. nutmeg
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 c. finely chopped walnuts
Directions

1Beat together the eggs, sugar, pumpkin and lemon juice.

2Stir together the dry ingredients.

3Stir in dry ingredients.

4Pour in a greased 15 x 10 x 1-inch pan.

5Top with 1 cup nuts.

6Bake at 375° for 15 minutes.

7Turn out on towel; sprinkle with powdered sugar. Starting at narrow end, roll towel and cake together.

8Cool; unroll.
