- 1 miniature pumpkin, about 1/2 pound
- 4 cups vegetable oil
- Coarse or kosher salt to taste or confectioners sugar to taste
Directions

1Cut top off pumpkin; remove and discard all seeds.

2Carefully cut pulp from pumpkin and thinly slice.

3Heat oil in an electric deep fryer to 300 to 325.

4Place pumpkin slices in basket of fryer and cook until golden and crisp.

5Using a slotted spoon, remove chips from fryer and drain on paper towels.

6Salt to taste if serving with meat, soups, or sandwiches, or sprinkle with confectioners sugar if serving with a dessert such as Pumpkin Brulee.
