- 2 Tablespoons Sugar
- 1/4 cups Pumpkin Puree
- 2 whole Eggs
- 3 Tablespoons French Vanilla Coffee Creamer
- 1/2 cups Water
- 1/4 teaspoons Salt
- 1/4 teaspoons Baking Powder
- 1/2 cups All-purpose Flour
- 1/2 cups Yellow Cornmeal
- Non-stick Cooking Spray
Directions

1Mix together sugar, pumpkin, egg, creamer and water in a bowl. Slowly mix in salt, baking powder flour and cornmeal until combined.

2Pour pancake sized scoops of the batter onto a non-stick sprayed cook top and cook on each side until browned. Remove to a plate when done and repeat with the remaining batter. Serve with a drizzle of syrup.
