- 2/3 c. pumpkin
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- 2 tsp. nutmeg
- 1/2 tsp. salt
- 3 eggs, beaten
- 1 c. sugar
- 1 c. chopped nuts
Directions

1Beat eggs and sugar until fluffy, add pumpkin.

2Mix flour and spices together, fold into pumpkin mixture.

3Grease a 15 x 10-inch cookie sheet and cover with wax paper.

4Grease and flour wax paper.

5Spread batter evenly on cookie sheet.

6Bake at 375° for 15 minutes.

7Place cake on a dampened dish towel.

8Roll up and place on a cake rack until cooled.
