- 1/3 cup margarine, softened
- 3 tbsp. brown sugar
- 2 eggs,
- egg substitute equivalent to
- 1 cup solid pack pumpkin
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1-1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. salt
- 1/4 tsp. ground cloves
- 1/4 tsp. ground allspice
- 1/2 cup buttermilk
- 1 cup quick-cooking oats
- 1/2 cup chopped dates
Directions

1In a mixing bowl, cream margarine and sugar.

2Beat in egg substitute and pumpkin.

3Combine the dry ingredients; add to creamed mixture alternately with buttermilk.

4Stir in oats and dates.

5Pour into an 8x4x2 loaf pan coated with nonstick cooking spray.

6Bake at 350F for 75 minutes or until a wooden toothpick inserted near the center comes out clean.

7Cool in pan 10 minutes; remove to a wire rack to cool.
