  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. chopped walnuts

Directions

    Beat eggs and sugar 5 minutes.

    Mix together pumpkin and lemon juice and add to first mixture.

    Sift together flour, baking powder, cinnamon, ginger, nutmeg and salt and add.

    Spread evenly in a jelly roll pan which has been greased and floured. Line the pan with wax paper. Sprinkle walnuts over the batter. Bake at 375° for 10 to 15 minutes. Sprinkle a dish towel with powdered sugar.
