- 3 eggs
- 1 c. sugar
- 1 tsp. lemon juice
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2/3 c. pumpkin
- 2/3 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. ginger
- 1 c. chopped nuts
- powdered sugar
Directions

1Beat eggs on high for 3 minutes.

2Gradually add sugar.

3Stir in pumpkin.

4In another bowl, mix rest of dry ingredients (not nuts).

5Gradually fold in pumpkin mixture.

6Spread into greased and floured cookie sheet.

7Top with chopped nuts.

8Bake at 375° for 15 minutes.

9Turn out on dish towel; sprinkle with powdered sugar.

10Roll up in towel.

11Let set for 1 hour.

12Unroll; fill with Cream Cheese Filling.

13Re-roll and refrigerate.
