- 3 eggs
- 1 1/2 c. cooked or canned pumpkin
- 1 (13 oz.) can evaporated milk
- 1/2 c. brown sugar, packed
- 1/2 c. granulated sugar
- 1 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1 tsp. vanilla extract
- 1 unbaked deep dish pastry shell, chilled
Directions

1Preheat oven to 450°.

2In large mixing bowl, beat eggs on high speed about 1/2 minute.

3Add pumpkin, evaporated milk, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, salt and vanilla.

4Beat on low until blended, about 1 1/2 minutes.

5Pour into prepared pastry shell.

6Bake 10 minutes, then reduce heat to 350° and bake for 45 minutes or until knife inserted into center of pie comes out clean.

7Serve with whipped cream topping.
