  • 2 large eggs, lightly beaten
  • 1 (16 oz.) can solid pack pumpkin
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 1 (12 oz.) can undiluted evaporated milk
  • 1 (9-inch) single crust pie basic pie crust

Directions

    Preheat oven to 425°.

    In a large bowl, combine the eggs, pumpkin, sugar, salt, spices and evaporated milk with a wire whisk just until mixed.

    Pour the filling into the crust.

    Bake in the lower third of the oven for 15 minutes, then lower the temperature to 350°.

    Continue baking for 40 to 50 minutes, or until knife inserted between center and edge comes out clean.

    Remove from oven and cool completely on wire rack before cutting.
