- 2 large eggs, lightly beaten
- 1 (16 oz.) can solid pack pumpkin
- 3/4 c. sugar
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1 (12 oz.) can undiluted evaporated milk
- 1 (9-inch) single crust pie basic pie crust
Directions

1Preheat oven to 425°.

2In a large bowl, combine the eggs, pumpkin, sugar, salt, spices and evaporated milk with a wire whisk just until mixed.

3Pour the filling into the crust.

4Bake in the lower third of the oven for 15 minutes, then lower the temperature to 350°.

5Continue baking for 40 to 50 minutes, or until knife inserted between center and edge comes out clean.

6Remove from oven and cool completely on wire rack before cutting.
