- 1 1/2 c. strained pumpkin
- 1 1/2 c. sugar
- 1 1/2 tsp. salt
- 1 tsp. pumpkin pie spice or cinnamon
- 1/2 tsp. powdered ginger
- 2 heaping Tbsp. flour
- 1 can evaporated milk plus water makes 2 c.
- 2 eggs
Directions

1Mix spices, flour, salt and sugar well.

2Add pumpkin and mix. Add slightly beaten eggs.

3Scald milk and add to mixture.

4Pour into unbaked crust.

5Bake at 450° about 15 minutes until crust is set, then reduce heat to 300° and bake about 45 minutes until done.
