- potatoes (enough for 3 c.), cooked and mashed
- 1/2 c. heavy cream, whipped stiff
- salt and pepper
- butter
- 1/2 c. grated Cheddar cheese
Directions

1Cook, drain and mash enough potatoes to make 3 cups.

2Season with butter, salt and pepper.

3Shape into a mound on a pie pan. Whip 1/2 cup heavy cream until stiff; season with salt, paprika and a dash of cayenne.

4Fold in 1/2 cup grated Cheddar cheese. Spread on potato mound.

5Bake in preheated moderate oven, 375°, for about 15 minutes.

6Makes 4 servings.
