Chantilly Potatoes

  • potatoes (enough for 3 c.), cooked and mashed
  • 1/2 c. heavy cream, whipped stiff
  • salt and pepper
  • butter
  • 1/2 c. grated Cheddar cheese

Directions

    Cook, drain and mash enough potatoes to make 3 cups.

    Season with butter, salt and pepper.

    Shape into a mound on a pie pan. Whip 1/2 cup heavy cream until stiff; season with salt, paprika and a dash of cayenne.

    Fold in 1/2 cup grated Cheddar cheese. Spread on potato mound.

    Bake in preheated moderate oven, 375°, for about 15 minutes.
