  • 3 c. cooked pumpkin
  • 3 c. milk, scalded
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1/2 tsp. ginger
  • 2 c. brown sugar
  • 2 Tbsp. cornstarch
  • 9 eggs, separated
  • 1/2 tsp. cloves
  • 3 (9-inch) unbaked pie shells

Directions

    Add beaten egg yolks, sugar, salt and spices to pumpkin. Gradually add scalded milk.

    Mix thoroughly.

    Fold in beaten egg whites.

    Pour into 3 pie shells.

    Bake at 425° for 10 minutes, then for 30 minutes at 350°.
