  • 1 1/2 c. cooked pumpkin
  • 1 c. brown sugar
  • 1 1/2 c. milk, scalded
  • 3 eggs, separated
  • 1/2 tsp. salt
  • 1 Tbsp. cornstarch
  • 1/4 tsp. ginger
  • 1/4 tsp. cloves
  • 1 tsp. cinnamon
  • pastry for 1 (9-inch) crust

Directions

    Mix pumpkin, beaten egg yolks, sugar, salt and spices. Gradually add scalded milk and mix thoroughly.

    Fold in stiffly beaten egg whites.

    Pour mixture into unbaked crust.

    Bake at 425° for 10 minutes; reduce heat to 350° and bake for 30 minutes.
