  • 1 1/2 c. mashed cooked pumpkin
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 1 1/4 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 3 slightly beaten eggs
  • 1 1/4 c. milk
  • 1 (6 oz.) can evaporated milk
  • 1 (9-inch) unbaked pastry shell

Directions

    Thoroughly combine the pumpkin, sugar, salt and spices.

    Blend in eggs, milk and evaporated milk.

    Pour into unbaked pastry shell (have edges crimped high; filling is generous).

    Bake at 425° for 10 minutes.

    Reduce to 350° and bake another 40 minutes, or until inserted knife comes out clean.
