- 2 eggs, beaten
- 1 can (16 oz.) pumpkin
- 1 c. firmly packed brown sugar
- 1 Tbsp. pumpkin pie spice
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1 2/3 c. evaporated milk
- 1 (9-inch) pastry shell, unbaked
Directions

1Combine eggs and pumpkin.

2Blend in sugar, spice, flour and salt; mix well.

3Add milk and mix well. Pour into pastry shell. Bake at 425° for 15 minutes.

4Reduce heat to 350° and continue baking 35 to 40 minutes or until knife inserted near center comes out clean.

5Cool.

6Store in refrigerator.

7One pie yields 8 servings.
