Pumpkin-Pineapple Squares

  • 4 med. eggs
  • 1 (16 oz.) can pumpkin
  • 2 c. crushed pineapple, no sugar added
  • 4 tsp. vanilla
  • 2 Tbsp. vegetable oil
  • 1-1/3 c. instant nonfat dry milk
  • brown sugar replacement to equal 2/3 c. sugar
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. imitation butter flavoring
  • 2 tsp. pumpkin pie spice
  • 4 slices enriched white or whole wheat bread, crumbled in blender

Directions

    In a large mixing bowl, beat eggs.

    Add pumpkin, pineapple, vanilla and oil.

    Mix until well blended.

    In a separate bowl, combine remaining ingredients.

    Add to egg mixture.

    Pour into 8 x 8 nonstick pan or foil tin.

    Bake at 375° for 55 minutes.

    Divide equally into 4 portions.
