- 4 med. eggs
- 1 (16 oz.) can pumpkin
- 2 c. crushed pineapple, no sugar added
- 4 tsp. vanilla
- 2 Tbsp. vegetable oil
- 1-1/3 c. instant nonfat dry milk
- brown sugar replacement to equal 2/3 c. sugar
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1/2 tsp. imitation butter flavoring
- 2 tsp. pumpkin pie spice
- 4 slices enriched white or whole wheat bread, crumbled in blender
Directions

1In a large mixing bowl, beat eggs.

2Add pumpkin, pineapple, vanilla and oil.

3Mix until well blended.

4In a separate bowl, combine remaining ingredients.

5Add to egg mixture.

6Pour into 8 x 8 nonstick pan or foil tin.

7Bake at 375° for 55 minutes.

8Divide equally into 4 portions.

9Makes 4 servings as part of midday meal. Supplement as required.
