- 2 large eggs
- 1 c. white sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. self-rising flour
- 2 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- 1/2 tsp. nutmeg
- 1 c. pecans, finely chopped (optional)
Directions

1Beat eggs about 5 minutes; add sugar gradually.

2Then add pumpkin, lemon juice, cinnamon, pumpkin pie spice and nutmeg. Blend together with mixer, then add flour.

3Mix together well. Pour into greased and floured 15 x 10 x 1-inch jelly roll pan. Top with chopped pecans.

4Bake at 375° for 15 minutes.

5Sprinkle with powdered sugar and turn out onto towel; sprinkle again with powdered sugar.

6Starting at narrow end, roll up.

7Cool about 1 hour; unroll and spread on Cream Cheese Filling.
