- 2/3 c. cooked, mashed pumpkin (or canned pumpkin)
- 3 eggs
- 1 c. sugar
- 3/4 c. all-purpose flour
- 1/2 tsp. nutmeg
- 2 tsp. cinnamon
- 1/2 tsp. ginger
- 1 tsp. baking powder
- 1 c. finely chopped nuts
- 1/2 tsp. salt
- 1 tsp. lemon juice
- powdered sugar to roll in
Directions

1Beat eggs at high speed for 5 minutes.

2Gradually beat in sugar.

3Stir in pumpkin and lemon juice.

4Combine flour, salt, baking powder and spices.

5Fold in flour mixture.

6Pour into a greased and floured (or Pam sprayed) jelly roll pan.

7Spread evenly.

8Bake at 375° for 15 minutes.

9Sprinkle powdered sugar on a soft towel, loosen cake and invert onto towel.

10Roll up cake in towel.

11Cool cake completely.

12Unroll and spread with filling.
