  • 3 eggs
  • 1 c. white sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt

    Beat eggs on high speed for 5 minutes. Gradually beat in sugar, pumpkin and lemon juice. Stir together remaining ingredients. Fold into pumpkin mixture. Spread on a greased and floured 10 x 15-inch jelly roll pan. Top with chopped nuts. Bake at 375° for 15 minutes. Turn out on a towel sprinkled with powdered sugar, then roll cake and towel together. Let cool about 5 minutes. Unroll and cool to touch.
