Ingredients

  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 1/2 tsp. nutmeg
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. salt

Directions

    Beat eggs at high speed for 3 minutes.

    Add sugar, pumpkin and lemon juice; set aside.

    Mix all other ingredients and fold into pumpkin mixture.

    Spread into greased 15 x 10 x 1-inch pan. Sprinkle cake with 1 cup chopped nuts.

    Bake at 375° for 15 minutes.

    Remove from oven and loosen cake with knife.

    Flip over onto a powdered sugar towel.

    Roll up towel in jelly roll fashion and cool for 45 minutes.

    Mix filling ingredients together.

    After cake has cooled, unroll and spread cake with filling and reroll. Refrigerate until served.
