- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 1/2 tsp. nutmeg
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. salt
Directions

1Beat eggs at high speed for 3 minutes.

2Add sugar, pumpkin and lemon juice; set aside.

3Mix all other ingredients and fold into pumpkin mixture.

4Spread into greased 15 x 10 x 1-inch pan. Sprinkle cake with 1 cup chopped nuts.

5Bake at 375° for 15 minutes.

6Remove from oven and loosen cake with knife.

7Flip over onto a powdered sugar towel.

8Roll up towel in jelly roll fashion and cool for 45 minutes.

9Mix filling ingredients together.

10After cake has cooled, unroll and spread cake with filling and reroll. Refrigerate until served.
