- 3 eggs
- 2/3 c. pumpkin
- 1 c. sugar
- 1 tsp. lemon juice
- 3/4 c. flour
- 1 tsp. baking powder (omit if using self-rising flour)
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg (1 tsp. if no ginger is used)
- 1/2 tsp. salt
- 1 c. chopped pecans
Directions

1Beat eggs for 5 minutes. Add next 3 ingredients.

2Mix flour, baking powder, salt and spices.

3Fold into pumpkin mixture.

4Pour into greased and floured cookie sheet.

5Sprinkle with chopped nuts. Bake 15 minutes (no longer) at 375°.

6Cool 1/2 hour in pan. Empty on towel sprinkled heavily with powdered sugar.

7Sprinkle the other side of layer.

8Roll towel and cake together loosely. Let sit until completely cool.
