- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 Tbsp. lemon juice
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 c. chopped nuts
Directions

1Grease and flour 10 1/2 x 15 1/2 x 1 1/8-inch pan.

2Whip eggs until thick and foamy (about 5 minutes).

3Add sugar gradually to eggs.

4Fold in pumpkin and lemon juice.

5Sift together dry ingredients and fold into egg mix beating until smooth.

6Pour into pan and spread to corners.

7Sprinkle with nuts and bake 20 to 25 minutes at 375° or until cake springs back to touch.

8Immediately loosen and invert on a towel sprinkled with confectioners sugar. While hot, roll cake and towel from narrow end.

9Cool completely on wire rack.
