- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 Tbsp. lemon juice
- 3/4 c. self-rising flour
- 1/2 tsp. salt
- 1 tsp. nutmeg
- 1 tsp. ginger
- 1 Tbsp. cinnamon
- 1 c. chopped nuts
Directions

1Beat eggs.

2Add sugar, pumpkin and lemon juice.

3Sift dry ingredients together and add to egg mixture.

4Mix well.

5Pour onto a 15 x 10 x 1-inch cookie sheet.

6Top with chopped nuts.

7Bake at 375° for 15 minutes.

8Turn this over onto a towel that has been sprinkled with powdered sugar.

9Roll this up like a jelly roll with the towel rolled up with it.

10Let this cool for about 1 hour. Unroll and spread filling on it and re-roll.

11Let chill for 2 hours before slicing.
