  • 1 c. sugar
  • 2/3 c. canned pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/4 tsp. nutmeg
  • 1 c. chopped pecans
  • 2 Tbsp. powdered sugar
  • 1 (8 oz.) pkg. cream cheese
  • 1/3 c. margarine
  • 1 c. powdered sugar
  • 1 tsp. vanilla

    Preheat oven to 375°. Grease and flour 15 x 10 x 1-inch jellyroll pan. Beat eggs at high speed until thick; gradually add 1 cup sugar and beat 5 minutes. Stir in pumpkin and lemon juice. In separate bowl, combine flour and next 5 ingredients; gradually stir into pumpkin mixture. Spread batter evenly in pan and sprinkle with 1 cup pecans. Bake at 375° for 12 to 15 minutes.
