Ingredients

  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. chopped pecans

Directions

    Beat eggs at high speed for five minutes.

    Beat in sugar, pumpkin and lemon juice.

    Stir dry ingredients (except pecans) together in a separate bowl.

    Stir dry mixture into the pumpkin mixture.

    Pour into a greased and floured cookie pan.

    Spread evenly and top with pecans.

    Bake in a 350° oven for 15 minutes. While still hot, turn out on a towel and sprinkle with powdered sugar.

    Starting at narrow end, roll towel and cake together; cool.
