- 1 cup sugar
- 2/3 cup pumpkin
- 3 eggs
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tbsp. cinnamon
- 3/4 cup flour
- 4 oz. cream cheese, softenened
- 1/2 tbsp. vanilla
- 1 tbsp. butter
- 1/2 cup powdered sugar
Directions

1Beat pumpkin, sugar and eggs for 5 minutes.

2Add baking soda, salt, cinnamon, and flour.

3Mix until well combined.

4For filling beat together all ingredients until well blended.

5Line large cookie sheet with wax paper, spread batter with spatula.

6Bake 375F for 15-18 minutes.

7Do NOT want it to be crispy.

8Cool five minutes, remove wax paper.

9Cut in half, roll each half in tea towel.

10Let cool completely.

11When cool, unroll, spread with filling.

12Reroll.

13Makes two rolls, wrap in foil and keep in refrigerator.

14Freezes very very well so I always double and freeze half.
