Ingredients

  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 1 c. powdered sugar
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. pecans, chopped

Directions

    Beat eggs on high speed for 5 full minutes.

    Gradually beat in sugar.

    Stir in pumpkin and lemon juice.

    Fold in sifted dry ingredients.

    Spread in greased and floured 10 x 15 x 1-inch pan. Top with pecans and bake 15 minutes at 375°.

    Turn out on a towel sprinkled with powdered sugar.

    Start at narrow end and roll cake and towel together.

    Let cool and unroll.

    Spread filling on cake and roll back up.
