  • 3 eggs
  • 2/3 c. pumpkin
  • 3/4 c. flour
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 c. sugar
  • 1 tsp. lemon juice
  • 1 tsp. baking powder
  • 1 tsp. ginger
  • 1/2 tsp. salt
  • 1 c. powdered sugar
  • 4 Tbsp. butter
  • 6 oz. cream cheese
  • 1/2 tsp. vanilla
  • 1/2 c. nuts

    Beat eggs.

    Gradually add sugar.

    Stir in pumpkin and lemon juice.

    Mix together dry ingredients.

    Fold the dry mixture in the pumpkin mixture.

    Spread in a greased and floured cookie sheet. Bake at 350° for 15 minutes.

    Put the cake on a powdered sugar cloth and roll it.
