Pumpkin Seed Brittle

- 2 Tbs. unsalted butter, plus additional for greasing pan
- 1 cup sugar
- 1/4 cup light corn syrup
- 1/4 tsp. baking soda
- 1 cup hulled, raw (green) pumpkin seeds
Directions

1Line baking sheet with parchment paper, and grease with butter.

2Combine sugar and 1/4 cup water in saucepan.

3Add corn syrup and butter, and bring to a simmer over medium-high heatwatch carefully, as mixture will foam.

4Simmer 10 minutes, or until mixture turns light caramel color, swirling pot often.

5Remove from heat, and stir in baking soda and pumpkin seeds.

6Add dash of salt, if desired.

7Pour onto prepared baking sheet, spreading with back of wooden spoon.

8Let cool and harden.

9Break into pieces, and store in airtight container.
