- 2 russet potatoes large Idaho, peeled, sliced very thin
- 5 tablespoons butter
- salt
- pepper
Directions

1Heat the butter in a heavy 12-inch skillet.

2Dry the potato slices on paper towel.

3Arrange slices in a ring on bottom of skillet.

4Fill the center with overlapping slices.

5Sprinkle with salt and pepper.

6Arrange a second layer with remaining slices.

7Invert a heatproof dish over the potatoes and place a heavy objet on the plate to weigh the potatoes down.

8Saute the potatoes over medium heat until the underside is nice and golden and the slices are molded together.

9Remove the weight and the plate and carefully turn the potatoes all at once.

10Cook until browned and cooked through.

11Cut in quarters and place in plates
