- 3 Tbsp. butter
- 1/2 tsp. curry powder
- 1 (16 oz.) can pumpkin
- 1 c. half and half
- 1 large onion
- 2 c. chicken stock
- 1 c. apple cider
- 1 tsp. fennel seed
Directions

1Melt butter in saucepan.

2Add onion, fennel, curry and salt to taste.

3Cook until onion is translucent over medium heat.

4Add stock and pumpkin and simmer, covered, 15 minutes.

5Puree pumpkin mixture in food processor or blender until smooth.

6Add cider and mix.

7Pour mixture back into saucepan.

8Add half and half and heat before serving.

9Serves 6.
