Pumpkin Soup

Ingredients

  • 6 c. strong chicken stock
  • 1 medium onion, chopped
  • 3/4 c. scallions or green onions
  • 1 can pumpkin (about 2 1/2 c.)
  • 2 c. half and half milk and cream
  • 2 tsp. salt
  • 1/2 tsp. cayenne pepper
  • 1 tsp. lemon pepper
  • 1 c. heavy cream, whipped and salted
  • minced green onion tops

    Bring stock to a boil.

    Add onions or scallions.

    Simmer until tender.

    Combine with pumpkin and whirl well in blender. Will be several batches.
