Ingredients

  • 2 T. oil
  • 2-3 garlic cloves, minced
  • 1 tsp grated ginger
  • 2 lb pumpkin,cubed
  • 1 lg. sweet potato, cubed
  • 2 carrots, cubed
  • 4 cups water
  • 1 can coconut milk
  • 2 tsp. sweet chili sauce
  • salt and pepper

Directions

    Saute garlic and ginger in oil until fragrant.Add vegetables and cook 8-10 minutes, stirring frequently.

    Add remaining ingredients, bring to a simmer and cook for 45 minutes. Blend using a stick blender. Season to taste.
