Pumpkin Soup

Ingredients
- 4 Tbsp. butter
- 1/2 c. chopped onion
- 1 clove garlic, chopped
- 2 c. pumpkin puree
- 4 c. chicken stock
- 1 bay leaf
- pinch of sugar
- pinch of nutmeg
- 1/3 Tbsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 c. light cream
Directions

1Melt butter in saucepan over medium heat.

2Add onion and garlic.

3Saute until soft and translucent (8 minutes).

4Add pumpkin and stock.

5Stir well to mix.

6Add bay leaf, sugar, curry and nutmeg.

7Bring to boil, lower to simmer and cook for 30 minutes. Add salt and pepper to taste.

8Remove from heat.

9Add cream. Return to heat.

10Bring soup to hot, but do not simmer.

11Serve hot.
