  • 2 cups All-purpose Or Whole Wheat Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 teaspoons Cinnamon
  • 1 teaspoon Ground Ginger
  • 1/2 teaspoons Cardamom
  • 1/4 teaspoons Ground Cloves
  • 1/4 teaspoons Ground Nutmeg
  • 4 whole Eggs
  • 2 cups Pumpkin Puree
  • 1 cup Brown Sugar
  • 1 container (111g Size) Unsweetened Applesauce
  • 1 cup Wheat Germ
  • Pumpkin Seeds (optional)

Directions

    Preheat oven to 350°F and line muffin tins.

    In one bowl, mix together flour, baking powder, baking soda, salt, and spices.

    In a second bowl, mix together eggs, pumpkin, brown sugar, and applesauce.

    Stir dry into wet ingredients. When almost mixed, add wheat germ and incorporate.

    Scoop into muffin liners. Sprinkle on pumpkin seeds (optional). Bake for 20 minutes or until inserted toothpick comes out clean.
