Curried Asparagus

  • 1 lb. fresh asparagus, cooked and strained
  • 1 tsp. minced onion
  • 1/2 tsp. curry
  • 1/2 c. soft bread crumbs
  • 5 Tbsp. margarine
  • 1/2 tsp. salt
  • 3 Tbsp. flour
  • 1/8 tsp. pepper
  • 1 1/2 c. milk

Directions

    Place asparagus in shallow baking dish.

    Mix 2 tablespoons margarine with bread crumbs and set aside.

    Blend salt, pepper, flour and curry with remaining margarine.

    Add milk and cook.

    Add onion and pour over asparagus.

    Sprinkle with bread crumbs. Bake 15 minutes at 425°.
