- 4 medium russet baking potatoes
- 3 tablespoons olive oil
- 4 teaspoons garlic, minced
- salt and pepper
- white wine vinegar (optional)
Directions

1Pre-heat the oven to 375.

2Bake the potatoes until soft (30 to 50 minutes, depending on the size).

3Slowly heat the oil.

4Remove from the heat and add the garlic.

5Allow steeping at least 10 minutes.

6Place the potato on a cutting board.

7Cover with a clean towel.

8Using a meat tenderizing mallet carefully punch the potato.

9Use a spatula to transfer to a plate.

10Pour the garlic oil and vinegar (if used) over the potato.
