- 4 potatoes (baking kind)
- 8 Tbsp. milk
- 3/4 c. grated Cheddar cheese
- salt and pepper to taste
- 1 Tbsp. margarine
- oil
Directions

1Wash potatoes well; prick some holes in them with a fork.

2Rub potatoes with a small amount of oil.

3Bake at 400° for 45 to 60 minutes.

4Remove from oven and cool.

5Cut potatoes lengthwise and scoop out insides.

6Put into a bowl.

7Save the skins.

8Save 1/3 cup of cheese for topping.

9Mix the rest of the cheese, milk, salt and pepper with potatoes.

10Add margarine.

11Using a mixer or masher, mix all together while warm.
