Ingredients

  • 6 quail
  • 2 Tbsp. chopped celery
  • 1 1/2 sticks butter
  • 1 tsp. freshly ground black pepper
  • 2 small white onions
  • 1 Tbsp. grated carrots
  • 1 1/2 tsp. salt
  • 1 c. water
  • 1/2 oz. good, dry sherry

Directions

    Melt butter in heavy frying pan.

    Brown quail and remove from pan.
  3. 3
    Saute other ingredients, except sherry, for 3 minutes.

    Then add the quail and water.
  5. 5
    Cook slowly, covered, for 1 1/2 hours. Baste and add a little additional water as needed.

    Uncover and add sherry; cook for 30 minutes.
  7. 7
    Good served with herb rice.
