- 6 quail
- 2 Tbsp. chopped celery
- 1 1/2 sticks butter
- 1 tsp. freshly ground black pepper
- 2 small white onions
- 1 Tbsp. grated carrots
- 1 1/2 tsp. salt
- 1 c. water
- 1/2 oz. good, dry sherry
Directions

1Melt butter in heavy frying pan.

2Brown quail and remove from pan.

3Saute other ingredients, except sherry, for 3 minutes.

4Then add the quail and water.

5Cook slowly, covered, for 1 1/2 hours. Baste and add a little additional water as needed.

6Uncover and add sherry; cook for 30 minutes.

7Good served with herb rice.
