Quail With Mushrooms

  • 1/3 c. butter or margarine
  • 4 ready to cook quail
  • 1 small onion, chopped
  • 1/2 lb. mushrooms, sliced
  • 1 c. chicken broth
  • 1 1/4 tsp. salt
  • toast points
  • 2 Tbsp. all-purpose flour
  • 3 Tbsp. Sauterne (optional)

    About 45 minutes before serving, preheat oven to 350°.

    In Dutch oven over medium heat, in hot butter or margarine, cook quail until browned on both sides.

    Remove quail to platter.

    To drippings in the Dutch oven, add onion and mushrooms; cook, stirring occasionally, until onion is tender, about 5 minutes. Stir in chicken broth and salt.

    Add quail to mixture, cover and bake 20 minutes or until quail is tender.
