Ingredients
- 4 to 5 lb. chuck roast
- 2 sliced onions
- 1 clove sliced garlic
- 2 Tbsp. oil
- salt and pepper
- 1/2 c. raisins
- 2 bay leaves
- 1 c. boiling water
Directions

1Brown onions and garlic in oil.

2Brown meat on all sides.

3Add raisins, bay leaves and water.

4Cover tightly and simmer 3 hours or until tender on very low heat.

5Remove meat; strain and measure liquid.

6For each cup of liquid, add 2 tablespoons of flour.

7Cook until thick, stirring constantly.

8Serve gravy with meat and a side dish of corn and spiced red crab apples.

9Serves 6 to 8.
