- 4 each salmon steaks
- 1 tablespoon vegetable oil salad
- 1 x lemon juice
- 1 tablespoon salt
- 1 each onions
- 4 each parsley sprigs
- 1/2 cup scallions, spring or green onions tops
- 1/2 cup green bell peppers
- 1/4 cup parsley leaves
- 1/2 cup spinach
- 2 tablespoons lemon juice
- 1 cup mayonnaise
Directions

1Spread the oil in a fry pan or baking dish.

2Place the salmon steaks next to one another, but not overlapping.

3Add the lemon juice and peel, peppercorns, salt, onion and just enough hot water to cover the fish.

4Cover and poach on top of the stove (if using fry pan) over low heat, for 10 to 12 minutes or in 325F (160C) oven (in baking dish) for the same length of time or until the salmon flakes.

5Allow the fish to cool in the liquid.

6Drain well and remove the skin.

7Arrange on platter, then cover completely with the following sauce.
