- 1 lb. Longhorn Cheddar cheese
- 1 lb. Monterey Jack cheese
- 12 large flour tortillas
- 1 medium onion, chopped
- 1 (4 oz.) can green chilies
- 1 (28 oz.) can tomatoes
- 1 Tbsp. jalapeno sauce
- 1 green pepper, sliced in rings
Directions

1Preheat oven to 425°.

2Oil a 13 x 9-inch casserole dish.

3On each tortilla, place one slide of each kind of cheese near edge. Top with a teaspoon each of onion and chilies.

4Roll tortillas up; fold ends under to form a small package.

5Place in casserole dish, overlapping.

6Mash tomatoes in bowl with jalapeno sauce. Pour over quesadillas; garnish with green pepper rings.

7Bake in a 425° oven for 25 to 30 minutes.
