  • 1 lb. Longhorn Cheddar cheese
  • 1 lb. Monterey Jack cheese
  • 12 large flour tortillas
  • 1 medium onion, chopped
  • 1 (4 oz.) can green chilies
  • 1 (28 oz.) can tomatoes
  • 1 Tbsp. jalapeno sauce
  • 1 green pepper, sliced in rings

Directions

    Preheat oven to 425°.

    Oil a 13 x 9-inch casserole dish.

    On each tortilla, place one slide of each kind of cheese near edge. Top with a teaspoon each of onion and chilies.

    Roll tortillas up; fold ends under to form a small package.

    Place in casserole dish, overlapping.

    Mash tomatoes in bowl with jalapeno sauce. Pour over quesadillas; garnish with green pepper rings.

    Bake in a 425° oven for 25 to 30 minutes.
