- 6 (10-inch) or 12 (7-inch) flour tortillas
- 1 pound Monterey Jack cheese, grated
- 4 pickled jalapeno peppers, minced wearing rubber gloves
- 2 tablespoons minced fresh cilantro
Directions

1Heat a griddle or large frying pan on the stove.

2Lay 2 tortillas on the griddle and cover with grated cheese.

3Sprinkle pickled jalapeno and cilantro over the cheese, and top each with another tortilla.

4Press the tortillas down with a spatula and then flip them over.

5Transfer the quesadillas to a cutting board and cut them into wedges
