- 2 c. grated Swiss cheese or Monterey Jack
- 8 to 10 slices bacon, cooked
- 1/2 pt. heavy cream
- 1/2 c. milk
- 4 eggs
- 1/2 tsp. powdered mustard
- 1/8 tsp. pepper
- 1 (9-inch) pie crust (deep dish is best)
Directions

1Mix together cream, milk, eggs, mustard and pepper. Meanwhile, cook bacon.

2Break up bacon and put in bottom of pie shell.

3Spread cheese on top of bacon.

4Pour egg mixture over top of cheese.

5Bake at 375° for approximately 45 minutes to an hour. Put knife between center and edge to check if done.

6It should be fairly clean.

7During last 15 minutes, add strips of bacon to top of quiche, if desired.
