Ingredients

  • 2 c. grated Swiss cheese or Monterey Jack
  • 8 to 10 slices bacon, cooked
  • 1/2 pt. heavy cream
  • 1/2 c. milk
  • 4 eggs
  • 1/2 tsp. powdered mustard
  • 1/8 tsp. pepper
  • 1 (9-inch) pie crust (deep dish is best)

Directions

    Mix together cream, milk, eggs, mustard and pepper. Meanwhile, cook bacon.

    Break up bacon and put in bottom of pie shell.
  3. 3
    Spread cheese on top of bacon.
  4. 4
    Pour egg mixture over top of cheese.

    Bake at 375° for approximately 45 minutes to an hour. Put knife between center and edge to check if done.

    It should be fairly clean.

    During last 15 minutes, add strips of bacon to top of quiche, if desired.
