Ingredients

  • 2 (9-inch) pie crusts
  • yolk of 1 egg
  • 1/2 lb. bacon
  • 1/2 c. chopped onion
  • 3/4 c. Swiss cheese, shredded
  • 1/4 c. aged cheese, shredded
  • 4 eggs
  • 1 1/2 c. half and half or milk
  • dash of nutmeg
  • dash of cayenne pepper
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. parsley flakes

Directions

    Bake pie crusts, then baste with yolk of 1 egg and bake 2 more minutes.

    Saute bacon and onion.

    Beat 4 eggs and add to milk. Add all ingredients together; pour in pie shells and bake at 375° for 45 minutes.

    Take out of oven when knife comes out clean. Very good.
