- yolk of 1 egg
- 1/2 lb. bacon
- 1/2 c. chopped onion
- 3/4 c. Swiss cheese, shredded
- 1/4 c. aged cheese, shredded
- 4 eggs
- 1 1/2 c. half and half or milk
- dash of nutmeg
- dash of cayenne pepper
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. parsley flakes
Directions

1Bake pie crusts, then baste with yolk of 1 egg and bake 2 more minutes.

2Saute bacon and onion.

3Beat 4 eggs and add to milk. Add all ingredients together; pour in pie shells and bake at 375° for 45 minutes.

4Take out of oven when knife comes out clean. Very good.
